Here's another of my favorite cakes. Another option using vegetables in a cake, carrot again and this time pineapple.
I encourage you to do this cake if you love chocolate, I like these types of cakes because they are so fluffy and soft. And knowing that takes some vegetables makes me feel no so bad when I eat a piece. ;)

Chocolate carrot cake
from Cook and Food

100 g pecan wallnuts
340 g carrots
4 pineapple slices
2 tablespoons vanilla essence
200 grm plain flour
80 g wholemeal flour
25 g powdered cocoa
4 eggs
200g sugar
100 g sugar cane
240ml vegetable oil
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinamon
1/4 teaspoon nutmeg

Preheat the oven to 180 º.
Toast the nuts on a baking sheet for 8 min at 180º. Let stand.
Grate the carrots and chop the pineapple into small pieces (or crushed, for my liking I think it's better not find bits of carrot and pineapple, but if you prefer it's up to you). Chop the nuts.
In a bowl mix the flour, cocoa, baking soda, baking powder, salt, nutmeg and cinnamon. Mix.
In another bowl beat the eggs with the sugar until a white and fluffy mass, then add the oil and vanilla and continue beating until well blended and light mass
Now mix the dry ingredients with the wet, then add the carrots, pineapple and nuts. Mix.
Place the mixture into the parchment -lined loaf pan and cook for 40 min.

Remove from oven and let cool.

I decided to create a new section this year, it's not a creation of mine, I know.. but I also want to do it .
I Wear this jacket, well not yet, because I bought it online and I hope to arrive it very soon , but as you can imagine is almost mine ;)
Want it because I'm a vintage lady and Andrea has a wonderful things in her shop.
Use every day because I love the smell, but I also use products of this range and only natural products. I also like this store for their products.
Need just need it!! ;)

I want to thank all your comments about my recipe, I'd love to know if you tried. I hope to prepare another soon.

I started using Instagram, you can follow me here.

Following the suggestion of my friend V, this weekend I baked again a carrot cake.
I took some photos and here are the recipe. It's not really a creation of mine, I copied this recipe some time ago but I didn't  pointed the source (sometimes I like to be more organized), so I would like to stress that it is my adaptation (quantitiesremove and add ingredients). If someone really know about the source please let me know.
It is a cake that I usually bake because it's easy and I love cakes with vegetables as you know.

So there goes...

carrot cake with apple

100 g flour
75g wholemeal flour
150g sugarcane
120ml vegetable oil
125g shredded carrots
100g apple cut into 1/4 cubes
1 teaspoon cinnamon
1 teaspoon ginger
3/4 teaspoon nutmeg
2 eggs
1 teaspoon vanilla
1 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Preheat oven to 180 º.
In a bowl mix the sifted flour, sugar, baking powder, baking soda, salt, cinamon, ginger and nutmeg. In another bowl, beat eggs with oil and vanilla. Pour the dry mixture into the second bowl and mix with a spoon.
Add the carrot and apple, mix until a homogeneous mass.
Pour the batter into the parchment-lined loaf pan and bake for 40-50 min or until a wooden pick inserted in to the center comes out clean.

I hope you enjoy it and if you have any questions please let me know.

After feeling a little frustrated by what I've made so far (sometimes I would throw all my clothes and I would prefer to leave few clothes in the closet) I felt confident enough to venture into find a new project and sew again.I decided for this Burda pattern. I found this cotton fabric I thought was very soft and perfect for the shirt.I removed the zipper back (I find very uncomfortable) and I closed leaving an opening at the top.
I baked carrot cake with apple, I love cakes with vegetables.
I'm still knitting the scarf, yes ... is endless .
Happy weekend!
